Anfield Cake

When your soon-to-be 9 year old asks for a birthday cake in the shape of Anfield, what can you do?

This is my usual madeira recipe, with vanilla buttercream and strawberry jam. I made the cake from two 8″ square cakes, which I carved, and iced with fondant icing. I always use gel colourings as I find they give a better colour without making the icing too sticky, so it is easier to work with. I made the Liverpool badges with the help of cocktail sticks to get the detail they needed, and used an icing sugar solution as a glue to stick them in place.  I used a silver spray colouring to get a sheen on the roof of the stadium.

My Anfield cake was very well received by my LFC mad football fan – I don’t think he thought I could make it at all.
